1/2 teaspoon (2 mL) cinnamon, 1/4 teaspoon (1 mL) ginger and 1/4 teaspoon (1 mL) cloves

1 teaspoon (5 mL) ginger (dry)

2 teaspoons (10 mL) chopped fresh ginger

1 teaspoon (5 mL) fresh ginger, minced

1/2 teaspoon (2 mL) ground dried ginger

1 teaspoon (5 mL) mace

1 teaspoon (5 mL) nutmeg

1 teaspoon (5 mL) poultry seasoning

1/4 teaspoon (1 mL) thyme + 1/4 teaspoon (1 mL) sage

1 teaspoon (5 mL) pumpkin pie spice

1/2 teaspoon (2 mL) cinnamon, 1/2 teaspoon (2 mL) ginger, 1/8 teaspoon (.5 mL) ground allspice, 1/8 teaspoon (.5 mL) nutmeg

1/4 cup (60 mL) fresh mint, chopped

1 tablespoon (15 mL) dried mint leaves

1 tablespoon (15 mL) prepared mustard

Mix together 1 tablespoon (15 mL) dried mustard, 1 teaspoon (5 mL) water, 1 teaspoon (5 mL) vinegar and 1 teaspoon (5 mL) sugar

1 medium lemon

2 to 3 tablespoons (30 - 45 mL) lemon juice (fresh or bottled)

1 teaspoon (15 mL) lemon zest

1/2 teaspoon (2 mL) lemon extract OR 2 tablespoons (30 mL) lemon juice

1 medium orange

1/4 to 1/3 cup (60 - 75 mL) orange juice

1 tablespoon (15 mL) orange zest

1/2 teaspoon (2 mL) orange extract OR 1 teaspoon (5 mL) lemon juice

1 tablespoon (15 mL) fresh parsley, chopped

1 tablespoon (15 mL) chopped fresh chervil OR 1 teaspoon (5 mL) dried parsley

1 clove garlic

1/8 teaspoon (.5 mL) garlic powder OR 1/2 teaspoon (2 mL) granulated garlic OR 1/2 teaspoon (2 mL) garlic salt (reduce salt in recipe)

1 medium onion

2 tablespoons (30 mL) instant chopped or minced or onion flakes OR 1 1/2 teaspoons (7 mL) onion powder

White wine

Equal amount of apple juice or cider

Red wine

Equal amount of beef broth
